About the Recipe
When it comes to comfort foods, many people reach for mac and cheese. Just because you're vegan doesn't mean you have to give up the creamy pasta dish.
It just means switching out a few of the ingredients for some healthier ones.
Ingredients
- 1 1/2 Cup Cashews
- 1 Potato
- 2 Carrots
- 3/4 Cup Water
- 1/2 teaspoon Salt
- 1/4 Cup Nutritional Yeast
- 1 Garlic Clove, minced
- 1/2 teaspoon Garlic powder
- 1/4 teaspoon Turmeric
- To taste Pepper
- 16 oz Shell Pasta (or Elbow Pasta)
Preparation
1) Soak cashews if desired (2h in advance, can skip if using high powered blender). Drain cashews.
2) Peel and chop potato and carrots. Boil for 10min or until slightly soft.
3) Prepare pasta in a separate pot.
4) Drain potatoes and carrots, while the pasta is cooking, add all other ingredients to the blender. Blend until smooth.
5) Drain pasta, pour sauce over, sprinkle pepper, and/or nutritional yeast on top.
